Ho abbinato i gamberi, che trovo si sposino a meraviglia con il bacon, e ho aggiunto una nota croccante preparando dei ceci speziati al forno. Una variazione semplice probabilmente, ma ho pensato a ci\u00f2 che avrei voluto servire loro, come miei ospiti, senza stravolgere la base fondamentale della ricetta: i riso rosso.\nLa prima parte resta quindi come la prova tecnica, aggiungendo ingredienti e profumi che, a parere mio, avrebbero potuto entusiasmare i commensali.\n\nPorzioni:\u00a04\n3 fette di bacon oppure 3 cucchiai di burro\n\u00bd cup di cipolla tritata (mezza cipolla)\n1 spicchio d\u2019aglio tritato\n1 tazza di riso a grano lungo (225 g)\n6 once di passata di pomodoro (180 g)\n1 cucchiaino di zucchero\n1 cucchiaino di sale\u00a0\n\u00bd cucchiaino di pepe nero\u00a0\n1 foglia di alloro\u00a0\n2 cup di brodo di pesce o acqua (470 ml)\n2 o tre rametti di timo fresco\u00a0\n4 Gamberoni\n1 confezione di ceci in scatola (240 gr di ceci)\nun cucchiaino di peperoncino\nun cucchiaino di mix Amazzonia (acquistato nella mia drogheria di fiducia)\nolio q.b.\n\n\n\nPREPARAZIONE\nLavare il riso sotto l'acqua, sciacquandolo un paio di volte per eliminare l'amido.\nTagliare il bacon a cubetti o listarelle e cuocere a fiamma media, in una larga casseruola, fino a quando i cubetti sono croccanti e il bacon ha rilasciato il suo grasso (6-8 minuti). Scolare il bacon e tenerlo da parte. Se usate il burro, fatelo fondere, sempre in un\u2019ampia casseruola.\nNella stessa padella far cuocere i gamberi, spadellandoli per qualche minuto, dopo di che tenere da parte.\nAggiungere la cipolla e fatela cuocere nel grasso, fino a quando sar\u00e0 traslucida (2-3 minuti). Aggiungere l\u2019aglio e proseguire la cottura per un minuto circa. Unire il riso e cuocetelo, mescolando, fino a quando i chicchi perderanno la loro trasparenza. Unire quindi tutti gli altri ingredienti e portare a bollore, a fiamma alta.\nAbbassare la fiamma, mettere il coperchio e proseguire la cottura per 20-25 minuti, mescolando di tanto in tanto. Quando il riso \u00e8 cotto, spegnere il fuoco e far riposare per 5 minuti, sempre coperto. \nMentre il riso cuoce preparare i ceci, scolandoli dalla loro scatola. Asciugarli con un panno da cucina e condirli con olio, mettendoli su un foglio di carta forno all'interno di una teglia.\nInfornare a 190\u00b0 per 40 minuti, girandoli ogni tanto.\nPrima del termine della cottura condire con il cucchiaino di peperoncino e di Amazzonia.\nEliminare la foglia di alloro dalla casseruola dove si \u00e8 cotto il riso e sgranarlo con una forchetta, prima di rovesciarlo nel piatto da portata.\nRegolare di sale e pepe, guarnirlo con del prezzemolo fresco, il bacon, i gamberi e i ceci. \n\n\u00a0ENG - recipe\n\nI tried to figure out to invite some Gullah friends for dinner, in my town and to share with them a fusion Red rice with the addition of chickpeas (a typical local ingredient) and a pinc of my favourite spice mix\u00a0\u00a0\u00a0\n\u00a0\nserving 4:\u00a0\n3 slices bacon, diced, or 3 tablespoons butter\n\u00bd cup finely diced onion\n1 teaspoon minced garlic (1 clove)\n1 cup long-grain rice (200 g)\n1 (6-ounce) can tomato paste\n1 teaspoon sugar\n1 teaspoon salt\n\u00bd teaspoon black pepper\n1 bay leaf\n2 cups Fish\u00a0 Stock or water (400 ml)\n2-3 sprigs of Thyme\n4 Tiger Prawns\u00a0\n1 can chickpeas\n1 tsp Cayenne Pepper\u00a0\n1 tsp Amazzonia mix\u00a0\n1-2 Tbs Extra-Virgin Olive Oil\u00a0\n\u00a0\nRinse the rice under current water to remove the starch. Slice or dice the bacon and \u00a0saut\u00e9 in a heavy saucepan over medium heat until crisp and the fat is rendered, 6 to 8 minutes. Remove the bacon to paper towels to drain. If using butter, simply heat in the pan over medium heat until melted.\nIn the same saucepan, saut\u00e9 the Tiger Prawns for few minutes. Remove from the pan and set aside.\u00a0\nAdd the onion to the pan and saut\u00e9 until translucent, about 2 minutes. Stir in the garlic and cook 1 minute longer. Stir in the rice and cook until the rice is no longer translucent, 2 to 3 minutes. Stir in the tomato paste, sugar (if using), salt, pepper, bay leaf, and chicken stock. Bring to a boil over high heat,\u00a0then reduce the heat to low, cover, and simmer until the rice is tender, 20 to 25 minutes, stirring halfway through. Let stand at least 5 minutes when done.\nMeanwhile, prepare the chickpeas.\u00a0\nDrain canned chickpeas, rinse under the current water, then dry them with kitchen paper.\u00a0 Put the chickpeas in a bowl, stir in the Extra-Virgin Olive Oil , then put them on a bakin tray and bake at 190\u00b0C for 40\u2019, turning them occasionally. Before the end of cooking, add the spices.\u00a0\nGo back to the rice. Remove and discard the bay leaf. Fluff with a fork before serving.\nArrange the Red rice on a serving plate, with bacon, the Tiger Prawns and the spicy chickpeas.
